New Year's Black-eyed Peas
Eating black-eyed peas on New Year’s Day is supposed to give you luck in the upcoming year. I wasn’t exactly prepared for this, so I came up with this quick version. It was delicious. My husband raved about it!
2 cans black eyed peas, drained
2 tablespoons olive oil
1 yellow onion, diced
2 cloves garlic, minced
3 slices turkey bacon, chopped
1 link andouille turkey sausage, sliced
1 14.5 oz. can of chopped tomatoes. I used fire roasted.
¼ -1/2 cup chicken stock.
½ tsp garlic powder
½ tsp thyme
1 tsp smoked paprika
2-3 handfuls (about 1 ½ cups) of spinach or chopped collards, kale or swiss chard
Directions
Heat up olive oil in pan. Add & sauté chopped onions, turkey bacon and andouille sausage until onions soften.
Add garlic, garlic powder, thyme and smoked paprika and sauté for 1 minute.
Add the tomatoes, chicken stock and spinach.
Simmer until sauce is reduced.
