Quiche Ingredients
For the gluten-free crust:
1 1/2 cups blanched almond flour
1/2 teaspoon salt
For the filling:
2 Tablespoons olive oil1
medium onion, thinly sliced
2 cups broccoli, chopped
1 clove garlic, minced
1/2 teaspoon baking soda
1/4 cup olive oil
1 Tablespoon water
1/4 cup sun-dried tomatoes
1 cup mushrooms, thinly sliced
3 large eggs, whisked
4 ounces goat cheese
Cooking Directions
For the crust: Preheat oven to 350 degrees.
In a large bowl, combine almond flour, salt, and baking soda. Stir the wet ingredients into the dry ingredients until thoroughly combined. Press the dough into a 9 1/2" pie pan.
Bake for 15 minutes until golden brown. Remove from the oven and let cool completely before filling.
For the quiche: Preheat oven to 350.
Heat oil in large skillet over medium heat. Sauté onion in oil for three minutes or until soft and translucent. Add the remaining vegetables and sauté until soft, approximately 6-8 minutes.
In a large bowl, combine the eggs and cheese. Stir in the vegetables and salt.
Pour into crust. Put pie tin on a baking sheet to avoid accidental spills. Bake on middle rack of oven at 350 for 30-35 minute until edges are slightly browned. Let quiche cool for 30 minutes then serve.

Spinach and White Bean Salad with Oranges and Grapefruit
Ingredients:
1 Tbsp. extra-virgin olive oil
2 Tbsp. 100% orange juice
2 drops Orange Vitality Oil
2 Tbsp. red wine vinegar
Sea salt and ground black pepper (to taste; optional)
Orange Vitality Essential Oil has a wonderful aroma and taste. It is high in antioxidants and supports your immune system!
1 medium navel orange
1 medium pink grapefruit
10 packed cups fresh organic baby spinach (or mesclun greens)
2 (15-oz.) cans cannellini beans, rinsed, drained
Preparation:
1. Combine oil, orange juice, orange oil and vinegar in a small bowl; whisk to blend.
2. Season with salt and pepper if desired; mix well. Set aside.
3. Slice off ends of orange and grapefruit so they can sit flat on work surface. Slice downward around fruit to remove peel and white pith. Slice peeled fruit crosswise into half-inch-thick circles, removing any seeds. Cut grapefruit slices in half. Arrange slices evenly on four serving plates.
4. Combine spinach and beans in a large bowl; toss to blend.
5. Drizzle with dressing; toss gently to blend.
6. Divide spinach mixture evenly among four plates.
Cinnamon Banana Pancakes
2 over ripe bananas, sliced
3 eggs
1 Tbsp. coconut milk
3 Tbsp. Einkorn Flour
1 drop Cinnamon Bark Vitality Oil
Directions:
In small bowl mix all ingredients, except bananas. Add bananas and mix to coat.
Warm griddle. Cook through the middle and well browned.
Serve with pure, maple syrup and fresh fruit.
Einkorn Flour is an ancient grain with only 15 chromosomes. It is much more digestible than modern wheat. Young Living carries it. I have also found it at Mennonite stores. Co-ops often carry ancient grains. They are better for you! You can order online through Young Living. If in a pinch, you could use a sprouted flour or whole wheat but it isn’t as healthy.
